So I have run my cables to the tub ok, but Iv now got another question,
Where has everyone run the earthing cable from the second battery in the tub to?! Im trying to look for a suitable place but want to make sure im not missing so obvious that I will feel like a goose!!!

For what I'v been told back to the chassi.

So where has people that have a tub battery run theirs? I have a much heavyer lead to run as a earth to the chassis, but will that be enough?

Earth to the chassis will work, and under most cases it will work fine, however running it back to the battery just helps limit the number of earthing problems one might have in the future.

hahahaha I very much like that too. Definitely one for the memory bank. Reflects my line of work too, being a HV linesman, where we try and avoid as many connection points as possible.
