Oil temps should probably not go past 110C, EGTs can sit at 650C and peak at 750C or more under extreme loads. EGT drops across turbochargers by about 100-150C, so if you want an accurate measurement, the thermocouple/pyrometer needs to be mounted as close as possible to the turbine inlet (where it will be the hottest).
