So I changed back to my 265/75/16 on alloy rims from 265/70/16 on steel rims yesterday, and I notice a performance increase.

Can someone explain why this would be so?
 
Like Rusty said, maybe the weight difference, or perhaps your just imagining things.

I'd agree - weight in the wheels - I took off the spare wheel (steel) and replaced it with an alloy wheel and there is 10kg difference between the 2.
 
i had 245/75/16 big horns on the alloys, changed to the stock 265/70/16 bridgestone duelers on steel wheels and performance has dropped noticeably
 
Of course there will be different in weight. Alloy wheels are lighter because of their composition. Whereas steel wheels are heaving because of their composition and containing iron in much amount.
